BEEF or PORK RIBS PREPARED IN
TRADITIONAL AMERICAN STYLE
Coastweek - -
A Shanzu carnivore just back from the United States
describe this recipe as: "the best ... absolutely the best
... way to
prepare beef or pork ribs. It takes a little time but the end result
is
worth waiting for. If you don't have molasses you can use a good
rich dark Kenya honey as a suitable substitute."

MOMBASA MEAT
'KALIO' - A RICH LOCAL CURRY
Kindly
forwarded by a 'meat
eating reader'
in Makupa, Mombasa, who
writes: "Our family just love this rich meat dish. We are so
lucky to
have such fresh ingredients readily available from nearby Majengo
market. It is best to marinate the meat in the evening and then
prepare it for the main meal on the next day. We try and vary the
Garam Masala, the simple recipe we have provided is our
favourite !"

MBUZI
WA KITUNGU SUMU NA VIAZI TAMU
This
is a tasty recipe for traditional garlic-roasted lamb or goat.
Insist on FRESH rosemary, if possible. The flavour it imparts to
the lamb or goat will be far superior to that of dried. If you like,
white potatoes may be substituted for the sweet potatoes.

serve it in wooden bowls and eat with your fingers. At the con-
clusion of the meal provide finger bowls with warm water and
and sliced limes.
