INGREDIENTS:
(serves two)
• two cups rice
• half a packet (250 grms.) coconut cream
• half a litre milk
• two table spoons ghee or butter
• one and a half cups sugar
• half a tea spoon of cardamom seeds
• one table spoon of fresh dried yeast
• one and a half cups hot water
.
PREPARATION:
Preparation time: approx.
forty five minutes plus minimum six hours (standing)
Cooking time: approx. thirty
minutes
Method:

Soak the rice for three to four hours or overnight if possible
mix together half a teaspoon sugar, two tablespoons lukewarm
water and yeast and allow to ferment for five to six
minutes (i.e. until it becomes frothy).

Dissolve the coconut cream in one and a half cups hot water.

Drain the rice. Put half the quantity of rice and half the
quantity of milk, previously warmed, in a liquidiser and
liquidise until smooth; repeat for the other half and mix the
two together.

Add coconut liquid, fermented yeast and cardamom seeds to the
above, cover and leave to rise in a warm place (e.g. under a
boiler or near a radiator). This can take six to twelve hours.

When the mixture has leavened, whisk in the remaining sugar;
divide mixture into two.

Place a twenty five cms. round cake dish or a pan on low heat
and put in one tablespoon of butter or ghee.

When hot, pour one half of the mixture into this, cover and
cook on lowest heat possible until the mixture thickens and
dries (approximately seven to ten minutes).

Then place under a medium grill to cook the top until golden
brown.

Allow to cool before easing out of the dish.

Repeat instructions seven to ten for the remaining half of the
mixture.

Serve with 'Kuku Paaka' (SEE
UNDER 'KUKU TUU' RECIPES) or on its own.
