YOUNG'S SPLENDID
MEDITERRANEAN FISH DISH

is an excellent (Spanish) fish recipe kindly
contributed by English reader Mrs. Margaret Young, who lives near
Aldeburgh (pronounced 'Orlbro') in Suffolk, U.K. She writes:
"like your Coastweek
readers we enjoy a very good 'mediterranean'
diet with lots of fish, vegetables, fruit, salad, garlic and
olive oil."

INGREDIENTS:
(serves four to six as a main
course)
-
Two pounds of any
fish you like cut in bite size pieces and lightly poached or
micro-waved
-
seven table spoons
of (good) olive oil
-
one onion finely
chopped
-
six cloves garlic
chopped or crushed
-
three medium
potatoes peeled and cut into big dice
-
two red peppers cut
into strips
-
four ripe tomatoes
skinned and chopped or a tin of chopped tomatoes
-
two tablespoons of
wine vinegar
-
quarter of a pint of
pint dry white wine
-
quarter of a pint of
fish stock or water
-
three bay leaves
.
PREPARATION:
-
Fry onion, garlic, potato and red peppers in oil
-
Add tomatoes and stir, then add rest of
ingredients minus the fish.

Cover and cook in preheated oven (180C) or on top
of stove till potatoes are just tender (about 30 mins)
-
Add fish and reheat slowly.
You can garnish with hard boiled egg and serve with a
salad of lettuce and raw onion tossed in an olive oil and wine/
balsamic vinegar dressing.
This can be varied in all sorts of ways - should feed
four to six !
