Ruysenaars was recognised by her many happy angling
clients at the

Pemba Channel Fishing Club, Shimoni,
Kenya South Coast, as one of the 'best chefs' in Kenya. We are
fortunate to have her personal recipe for the establishment's once
famous avocado ice cream. Those who have tried this delicacy
are unanimous: "Avocado ice cream is absolutely delicious."
