SALAD WITH BLACK BEANS
this salad also with red beans, prepared with onion,
garlic and lightly flavoured with red chillies ... Kibao !
LAMU MANGO AND KWALE AVOCADO SOUP
easily prepared and hugely enjoyed.
WITH KILIFI COCONUT RICE
was originally an oriental dish traditionally served with
spicey Thai food, but it goes very well with most sorts of local
sea food. Some chefs prefer peaches to Lamu mango - so, be
adventurous, and why not try both varieties ?
DIP WITH SPICEY FRIED OYSTERS
spectacular way to prepare a popular local dish:
particularly well received if accompanied with an early evening
'sun downer' over-looking the beach (i.e. served with a crisp,
dry white wine or a full-bodied 'Bloody Mary').
MANGO AND PORK SAUCE WITH PASTA
and easy: the mango delicately brings out the best in
the pork and is 'simply delicious' when served with hot pasta.
FRESH WATAMU LOBSTER
A.H. de V. of Mambrui
from Watamu hence the name of this recipe, but any good lobster
will do – it is the Lamu mango, after all, which gives this dish its
rich, piquant flavour and and its most attractive golden and orange
appearance. Remember to serve it well chilled in a suitably striking
presentation (image is always important !)".
WITH BAKED MALINDI SOLE
recipe may be made with other fresh fruits which are both
tart and sweet. Consider using apricots, peaches, or nectarines
if you can't find ripe Lamu mangoes.
