MANGO AND PORK
SAUCE WITH PASTA
- - Quick
and easy: the mango delicately brings
out the best in the pork and is 'simply delicious' when served
with with hot pasta.
Lamu mango in half around the pit.
pulp with a spoon and puree in a food processor or blender.
from pork and cut into three centimetre slices.
slices with the palm of your hand.
pan with vegetable oil spray and heat on medium high. Brown pork
for one minute on each side.
side with salt and pepper to taste.
and cook pork another five minutes to cook thoroughly.
Remove to a
plate and add mango puree to pan.
about 30 seconds scraping up brown bits of pork as it cooks.
drops Tabasco sauce and mango cubes.
Toss cubes in
puree for another 30 seconds.
over pork and serve with pasta.
