CHILLED LAMU MANGO AND
KWALE AVOCADO SOUP

Coastweek - - Colourful, easily prepared and hugely enjoyed.

INGREDIENTS: (two to three servings)

  • One medium sized Lamu mango, peeled and seeded, cut in chunks

  • One medium sized ripe Kwale avocado, peeled and seeded, cut in chunks

  • One cup apple juice, prepared from frozen concentrate

  • Half a cup of warm water

  • One cup of (preferably ‘non-fat’) plain yogurt

  • Two tables spoons fresh lemon juice

METHOD:

  1. In a blender, process all ingredients till combined but still slightly chunky.

  2. Chill and serve, garnished with chopped spring onions.
