Lamu Mango with Baked Malindi Sole

Coastweek - - This recipe can be made with other fresh fruits
which are both sweet and tart. Consider using apricots, peaches,
or nectarines if you can't find ripe mangoes.



  • One and a half tea spoons of soy sauce

  • One garlic clove, minced

  • Three large Malindi sole fillets

  • One and a half cups Lamu mango pieces

  • One teaspoon grated fresh ginger root

  • Two table spoons lemon juice

  • One quarter of a tea spoon of dried sea salt

  • freshly ground pepper to taste



  1. Preheat oven to 375 degrees.

  2. Place fillets in a single layer in glass baking dish.

  3. Mix soy sauce with garlic and spread over fish.

  4. Let stand at room temperature for 30 minutes to marinate.

  5. Combine mango, ginger, lemon juice, and salt and pepper.

  6. Spread this mixture over the fish and bake at 375 degrees for 10 minutes, or until fish flakes easily when tested with fork.

Serve with Safron Rice and fresh spring vegetables.
